BREADS & PIZZA: Pendleton Flour Mills provides premium quality Power Flour for our breads, rolls and pizza dough. A high Protein (13%) blend milled from Northern hard red spring wheat, Power is designed to produce superior quality baked goods that include artisan-type breads, sourdough breads and rolls, French and Italian designed loaves, as well as hand-tossed pizzas. Founded in Pendleton, Oregon, PFM has been a Pacific Coast supplier of fine flours since the early 1900s. 

 PASTA: De Cecco, founded in 1886, provides our pasta. They like it to be bronze drawn and slowly dried so it will fall into the plate full of taste, rough and always “al dente” and so do we. Starting from the finest quality durum wheat, De Cecco experts inspect the harvest fields checking the quality of the wheat crop that is bound for shipment to their mill. Upon arrival the wheat goes through lab checks where both grain shape and appearance are carefully examined: the surface must be even, without stains or imperfections, and the color must be pale yellow.

De Cecco Pasta’s final gluten control is carried out by: “the owner’s bare hands” – a ritual passed down from generation to generation to guarantee the best pasta. Before the actual tasting, tasting experts smell the semolina flour, the raw ingredient obtained from milling the wheat. After moistening it with water and letting it rest to set its unique fragrance free, the experts check that the pasta, meaning every single penna or spaghetto, without sauce, meets the standard of excellence of the De Cecco brand: color, aroma, elasticity and firmness during cooking. The smell must be of wheat and the color pale yellow, distinctive of De Cecco grains, and it shouldn’t have bitter streaks. Finally, consistency and elasticity of the pasta are checked. After tasting, done by the owners themselves, the pasta is set aside to rest for 5-10 minutes and then tasted again. This step checks the pasta’s capability of not softening and overcooking in the time between being drained and making it to the plate. To pass the test it has to taste “just cooked”. 

SAUCES: Stanislaus Food Products provides the Italian-style tomato products used in the Dattilo kitchen. Founded in 1942, and under the ownership of the Cortopassi family since 1979, Stanislaus Food Products is known for products “Packed From Fresh Tomatoes, Not From Concentrate!” and for its dedication to superior quality summed up in their motto “Every recipe is good when you make it with really good ingredients!” The Stanislaus dedication to high quality has made it a favorite in kitchens at many of the nation’s finest Italian restaurants. The Stanislaus Philosophy (a tomato company with a philosophy): “Because the customer has need, we have opportunity. Because the customer has choice, we must be superior. Because the customer has expectations, we must exceed them.” Stanislaus Food Products provides Dattilo with ingredients for our freshly made sauces.

OLIVE OIL: Di’ Stefano Extra Virgin Olive Oil

MILK FED VEAL & NEW ZEALAND LAMB: Nagle Veal & Quality Meats, a local company with a national reputation for providing superior quality veal and lamb to fine restaurants and hotels.

CHICKEN: Foster Farms, fresh never frozen, California grown without hormones or steroids. 

CLAMS: In 1923 Peter LaMonica opened a small seafood shop that specialized in fresh, locally harvested seafood. Business boomed, he expanded into the fishing business. Soon after, Cape May Foods was formed to process and pack high quality seafood products for the retail and restaurant trades. LaMonica has 14 boats in its fleet and its Atlantic Surf Clams (Sea Clams) are still harvested off the New Jersey shoreline. Then they are processed within 24 hours of being harvested and shipped to customers. LaMonica is a Sustainable Fishery where quality is a family tradition. 

DAIRY PRODUCTS: Rockview Farms, a family-owned and operated dairy has been in business in Southern California since 1927. It is one of the last dairies in California to own its own cows and process, package and distribute its own milk which is bottled daily at he Rockview plant in Downey, CA and generally delivered within 48 hours of milking. At Rockview, everything is done naturally and with the animal’s health in mind. Their cows have plenty of room to roam around in, sunshine to bask in, clean water to drink and fresh air to breathe. They are fed a nutritious diet of alfalfa hay and grains. Because they have their own farms, Rockview can guarantee its cows have never been given artificial growth hormones to stimulate milk production as is common with most other dairies.

DESSERTS: Bindi Ice Cream. Bindi Dessert is the leader of the Italian dessert. The company was founded in 1946 in Milan by Attilio Bindi, a Tuscan restaurateur. BEVERAGES:  The house coffee is an Italian Roast blend of Central and South American beans. With each order the beans are freshly ground for brewing in a personal size French Press Coffee Maker Carafe, then taken to the guest who placed the order. 

 

Orders of espresso and cappuccino are made on a Mr. Espresso machine with Mr. Espresso’s award winning Gold Medal blend that won the Chefs In America Competition four years running. Beans are freshly oak-wood roasted at the Di Ruocco family-owned plant in Oakland, California. Mr. Espresso is well known in the San Francisco Bay Area as a quality roaster and an established provider of espresso equipment, service, and training to a sizable share of coffeehouses and restaurants in the San Francisco Bay Area.
